The Pizzeria

True to the spirit of our project, we have developed — with the support of an expert pizzaiolo — a pizza whose entire process, from dough to baking, is designed to be managed even by non-professionals or people in vulnerable situations.
Every technical choice — from the selection of flours to the use of a professional oven designed to ensure sustainable workflows — reflects our commitment to both quality and inclusion.
Our pizza is long-fermented, highly hydrated and remarkably light.
From timeless classics such as Margherita and Vecchia Napoli, to more creative, seasonal and territory-inspired recipes, each pizza is the result of a continuous balance between tradition and innovation. Most of our ingredients are sourced from carefully selected local producers, ensuring authenticity, short supply chains and respect for the environment.


Spaces & Atmosphere

In winter, three indoor spaces welcome our guests: a spacious ground-floor dining room, a covered terrace overlooking the valley, and the taproom. Vintage suitcases, travel photography and reclaimed furnishings reflect the soul of our project.
In summer, the atmosphere shifts: outdoor seating and a panoramic terrace overlooking the valley create a setting that is informal yet refined, where every detail is carefully considered.

Among them, Dolceviaggio, our signature dessert with a secret ingredient waiting to be discovered, and our rich beer zabaglione, one of our guests’ favorites.
Alongside, our artisanal gelato, available in four flavors that change weekly, made with carefully selected ingredients.
We recommend finishing with our single-origin Uganda coffee (60% Robusta, 40% Arabica), sourced from the micro-plantation we support to help local families.
